Bechamel Sauce

Bechamel Sauce is one of my key ingredients in Lasagna (recipe here). The sauce gives the Lasagna such a wonderful taste and consistency. Bechamel is also very easy to make. Just a few steps to follow to get a smooth and creamy end result.

I first get started weighing the butter. I then weigh the flour, measure the milk and get out my nutmeg and salt.

Add the butter into a tall pot to avoid splatters and heat it up on medium heat. Once the butter starts to sizzle and bubble it’s time for the next step.

The flour gets added all at once now and then vigorously mixed in. I like to use a flat bottom whisk to avoid burning the butter and flour mixture. I cook it for about a minute, but never to turn to a true dark brown color. I stirr the mixture constantly. 

Once the flour and butter mixture has cooked for a bit it’s time to add the milk. I am adding it 1/3 at a time and keep stirring really well to avoid lumps. After all of the milk has been mixed in, I add the salt and nutmeg. If you like it peppery, try a little white pepper in the mix. It adds spice without the black specks. I cook it on medium for about 5 minutes or to my desired consistency. I like it thin, but not watery. Like a nice gravy texture. 

Now it’s ready to be used for the Lasagna or any other dish of your choice. You can also make it ahead and cool until needed, just know that it will develop a little skin on the top. I usually make it and then stir it up every few minutes until I use it. Enjoy!

  1. Heat the butter on medium until it starts to bubble and sizzle.
  2. Add all of the flour at once and whisk vigorously for one minute until smooth.
  3. Add milk 1/3 at a time. Keep whisking to avoid lumps.
  4. Lastly, add the salt and nutmeg and cook for about 5 minutes while continuously whisking. You want a gravy like consistency, not too thin or too thick.
  5. Enjoy!
